ITN TREATMENT at the 9th European Researchers Night in Ljubljana
The topic of this activity was focus in healthy food. Why should we consume more than 400 g of fruit and vegetables a day? Irina Milisav, Francesca Forno (ESR9) and Tinkara Pirc Marolt (UL MF, Ph.D. student) participated in the European Researchers’ Night 2018. The outreach activity took place at University of Ljubljana, Faculty of Medicine. It included: promotion of fruit and vegetable consumption for disease prevention, explanation on fruit and vegetable composition, especially of antioxidant properties of selected carotenoids and anthocyanins, simplified extraction of selected carotenoids and anthocyanins based on the modified method originally developed by Dr. Maria Rodrigo, Institute of Agrochemistry and Food Technology, Valencia, Spain that was disseminated through COST Eurocaroten and demonstration of ability to scavenge free radicals by antocyanins from red cabbage. The activity showed that consuming more than 400 grams of fruit and vegetables per day improves overall health and reduces the risk of diseases, like cardiovascular, cancer and diabetes (World Health Organization recommendation).
